Pizza Soup Re-visited!

A couple of years ago I created Pizza Soup! It really was a hit at my house! I haven’t had the opportunity to make it since and my Honey askes me to, often. He is truly a sweetheart and I really adore him, and I am going to re-visit this recipe so that he can have a new bowl of Pizza Soup! It really is a fun recipe, loaded with our favorite pizza toppings. Be creative and make it your own! Add your favorite toppings, veggies, other meats, whatever you like! Our favorite part of the recipe is how it is similar to French Onion Soup, with the bread inside and the cheese melted on top! So good! Serves 6

  • 1 pound Italian sausage
  • 1 bell pepper diced
  • 1 sweet onion diced
  • 2 cloves garlic minced
  • 1 tbsp. Italian seasoning
  • 1 tsp. oregano
  • 4 cups tomato sauce
  • Salt and Pepper to taste
  • 6 1 ½" thick slices of baguette bread
  • 2 tbsp. olive oil
  • 6 slices provolone cheese
  • 1 cup mozzarella cheese shredded
  • 1 tbsp. Partially dried basil
  • ½ cup mini pepperoni
  • Pizza seasoning to taste or more Italian seasoning
  • Shredded Parmesan to taste


  1. Preheat oven to 400°F
  2. Brown the sausage in a large pot over medium heat. Add the pepper and onion and cook until onion becomes slightly translucent. Add the garlic, Italian seasoning and oregano. (I like oregano, so I added it in addition to the Italian seasoning… again make it yours and adjust to your liking). Stir in the tomato sauce, bring to a boil, cover and simmer for 1 to 15 minutes just to let the flavors blend. Taste the seasoning and adjust adding salt and pepper to taste. While this is simmering place the slices of bread on a baking sheet. Brush with the olive oil on both sides. Pop into oven for 5 minutes or until top browns lightly, flip over and repeat browning the other side. Remove from oven and place a piece of the bread in the bottom of a large soup mug. Remove soup from heat. Ladle over the bread slices to completely cover. Put some mozzarella cheese on the top of the soup. Sprinkle a little of the basil. Lay a slice of the provolone on top of the mozzarella. Top with the mini pepperonis, little pizza seasoning and a sprinkle of the shredded parmesan. Place foil on baking sheet and place soup mugs on the foil (incase the bubble over). Place back into oven for 5 to 10 minutes, until cheese is melted and bubbly. Remove from oven and serve hot… BE CAREFUL, mug and soup is HOT. Serve with additional bread if desired.
