Zucchini Gratin!

By: Kecia’s Flavor Breakthrough! This is one of those recipes that I thought would be amazing! I usually write up the recipe as it pops into my head, make it, adjust as needed and re-edit. This one? It truly was as good on the plate as it was in my head. Simple, minimal ingredients and full of flavor! Not to mention a great way to use up your summer zucchini bounty. It makes a fantastic side dish and wonderful vegetarian lunch. I am thinking it is low carb, too for you low carb people! Serves 6

  • 2 cups zucchini slices
  • ½ a white onion thinly sliced
  • 1 cup sharp cheddar cheese shredded
  • 1 – 2 tsp. Morton Nature’s Seasoning or your favorite


  1. Preheat oven to 375°F
  2. Prepare a baking dish with non-stick spray. My dish is about 7 x 10. Make a layer of zucchini slices. Put some of the onion on top of the zucchini. Sprinkle with some of the cheese then your seasoning blend. Repeat until you are out of zucchini. Finishing with a layer of zucchini and topped with cheese. Cover with foil and bake for 30 minutes. Remove foil and put back into oven for another 10 minutes or until cheese starts to brown. Remove from oven and let stand for 5 – 10 minutes. Cut into six squares. And serve.
