Favorite Veggie Sandwich!

Spring and summer are sandwich season at my house. Usually we are very busy with yard work and sandwiches are just so simple. Since I have stopped eating meat the thing I miss the most is a really good sandwich. I have been a on a quest for something that is hearty, healthy, meatless and satisfies the craving without using a process artificial meat product. This is truly a favorite of mine, based on an old favorite I had many years ago that also had turkey. Though I am a vegetarian I am not vegan and have not given up dairy or eggs. I do believe that you could make this sandwich using vegan substitutes for some items or even leaving them out. I also love a good hearty whole grain roll, but you could certainly use a nice soft bread or even go gluten free. Serves 2

Ingredients

Ingredients:

  • 2 multi grain rolls cut in half
  • 1 avocado peeled and sliced
  • ½ cup of your favorite spouts I used radish sprouts
  • ½ cup of red and dark green lettuce blend
  • 1 slice of red onion
  • 1 tomato sliced
  • 2 tbsp. organic ranch dressing
  • 2 slices of Havarti cheese

Instructions

  1. Place ½ of the sliced avocado on the bottom of each roll. Top with sprouts, lettuce, onion and tomato. Drizzle the dressing over the sandwiches, add a slice of cheese to each and top off with the other half of the bun. Enjoy! I took the ingredients to work for lunch one day and I didn’t have the dressing with me. It was just as flavorful without!
