Vanilla Coconut Poke Cake!

So by now you know my passion for poke cakes! Easy peasy, right? I love to make them for my Honey, because… well… he loves cake and sometimes I just don’t have a lot of time! I am going to make this one extra special for him today! I LOVE him… and Valentine’s Day is coming soon so I thought I would make this one just for him! Plus I was at my mother’s house several months ago  and was looking in her china hutch. There was this beautiful plate that I just had to make a pretty Valentine’s Day post with. This plate was my grandma’s…  It is so pretty!

Serves 18


(Really??? I forgot the whipped topping in the photo!!)


  • 1 box moist white cake mix
  • 1 cup water
  • ¼ cup vegetable oil
  • 3 large egg whites
  • 2 boxes vanilla pudding (I like the cook n serve)
  • 1 tub whipped topping
  • 1 cup flake coconut

Valentine’s Day additions:

  • A little love
  • Red food coloring
  • Red sprinkles


Prepare cake mix and bake as directed for a 9 x 13” pan. Let cool slightly. Poke several holes through the cake. I use the opposite end of my wooden spoon.

Pink pudding

Prepare pudding as directed on package (you can use instant or cook and serve) for this cake I added a few drops of red food coloring to make my pudding pink. Pour pudding over the cake, using a spatula to spread and push down into the holes. Refrigerate and let pudding cool.

Spread whipped topping over the pudding.


Sprinkle with the coconut


some pretty colored sprinkles to finish!

  1. Grandma’s cake plate is so ultimate beautiful! Don’t you wish you lived in their generation some times?
    I know!! I will be making this cake for my coworkers next week my friend!! I can’t wait to take pictures..
    You so know since I will be making this in the evening so I will be sharing the pics with my “Tiffany orange/yellow glow” light thing going…
    But I know my coworkers will love this cake!! ♥

      Yes, sometimes I think it would have been so much fun to live in that generation! I love the items from this era!
