Turkey, Avocado and Bacon Grilled Cheese!

Two turkey sandwiches, one hot… one cold in my head today. I love the combo of turkey and bacon with avocado! Now making it hot and melty with some cheese… over the top good for me! I think everyone will like it here, too! I am hoping to get a loaf of bread made, but I never have a lot of time to do it, so… I might have to run to the bakery! But either way I think these will be amazing sandwiches!
- 2 tbsp. mayonnaise
- 1 tsp. ground chipotle chili pepper
- ½ tsp. garlic powder
- ½ tsp. salt
- 8 slices multi-grain bread
- 4 slices Pepper Jack cheese
- 1 avocado sliced
- 1 slices bacon, crispy
- 8 slices deli turkey breast (Or left over is even better!)
- 4 slices Colby Jack cheese
Mix together the mayo, chili powder, garlic powder and salt.
Spread some of the mixture on 4 slices of bread and lay mayo side down in large skillet or on griddle.
Now add a slice of pepper Jack to each piece of bread, top with avocado slices, now two bacon slices and two slices of the turkey breast on each sandwich, top with a slice of Colby Jack.
Spread the rest of the mayonnaise mixture on the remaining slices of bread and top off the sandwiches with the mayo side up. Cover and heat over medium low heat until the bread starts to brown and cheese starts to melt, flip and repeat. I like to go slowly so the cheese melts but the bread doesn’t burn.
Cut in half and serve hot with a nice salad, soup or some oven baked fries!
