Tortellini and Sausage Toss

We enjoy pasta at our house, I can’t deny. I have it in one form or another every week. Tonight I am having tortellini, I love them. My mom always called them belly buttons! She would make them with butter, garlic, salt, pepper and parmesan. I like to use them in soups, with sauces and even have a wonderful salad recipe that will be coming up soon! I wanted something super fast and easy for tonight… so this is what I will be making! Hope you love it! This was a complete hit in my house!
1 pound sweet ground Italian sausage
1 sweet onion julienned
2 cloves garlic
1 package of cheese tortellini (your favorite brand or homemade) prepared as directed
1 cup diced tomato
2 tbsp olive oil
1 tsp hot pepper flakes (optional)
1 tsp oregano
1 cup fresh spinach julienned
1 tbsp Italian Herb paste
½ cup shredded parmesan cheese
In deep skillet over medium heat brown the sausage, breaking up into bits as it cooks. Drain, return to skillet, add onion and cook until it becomes slightly translucent.
Add garlic cooking an additional minute or so until it becomes fragrant.
Now stir in the tortellini, tomato, olive oil, pepper flakes, oregano, spinach and herb paste.
Toss to coat pasta, continue to heat until spinach softens,
Sprinkle with the parmesan and toss again to mix through. Serve hot with a salad and bread.
