Toasted Garlic Mashed Potatoes

Mashed potatoes! What a wonderful, warm comfort food! I love them, my Honey loves them… Sometimes though, they can be a tad boring. So this time I am giving them a little excitement by toasting up some wonderful garlic to put it! Yum!
6 medium red potatoes, peeled and diced
4 cups vegetable or chicken broth
2 tbsp olive oil
4 cloves garlic minced
2 tbsp butter
½ cup cream
Salt and pepper to taste
Put potato chunks into large saucepan

Meanwhile while potatoes are cooking place 2 tablespoons of olive oil and minced garlic in a small skillet
heat over medium heat stirring frequently…
watch closely and when it starts to brown remove from heat. Be careful not to go to fast, it will burn and be bitter.
Add garlic, butter, cream and salt and pepper to potatoes
Mash with a potato masher.
Now stir to blend with a stiff spoon
Serve hot… tonight I am serving it with my Herb Grilled Chicken Breast and Basil Cream Sauce.
