The BEST Ribs Ever!

NO REALLY! The BEST Ribs my Honey has ever had… That is what he said! I owe this recipe to my very good friend. A lot of my recipes are inspired by recipes from Shawn, he is an amazing cook! I asked his advice on cooking ribs in the oven because I couldn’t use the smoker that day, and I have to say… I don’t think I will be smoking them again after this. YES… they are that good! He gave me the cooking instructions and I made up the rub!
- 1 slab baby back pork ribs
- 1 cup brown sugar
- 2 tsp. ground mustard
- 1 tsp. cayenne pepper (adj. to your taste)
- 1 tbsp. kosher salt
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 2 tsp. ground chipotle (for a smoky flavor)
Place ribs on a large sheet of heavy duty aluminum foil (large enough to wrap them in). In a medium size bowl, mix the remaining ingredients.
Cover both sides of the ribs with the rub. Wrap tightly in foil.
Wrap in an additional sheet of foil. I like to do this a couple hours ahead of cooking time and let them sit in the fridge. Heat oven to 225°F. Place ribs in foil on cookie sheet, put in oven. Bake for 2 and ½ hours or a bit longer.
Remove ribs from oven and open foil. Turn oven up to 350°F and place open ribs back in for 20 minutes or so to dry out a little bit.If you like you can add your favorite BBQ Sauce and pop back into the over for an additional 15 minutes to caramelize the sauce. I prefer to keep it just the dry rub and serve the sauce on the side.
Remove ribs from oven and cut in sections of 2 or 3 ribs each.
Serve hot with your favorite BBQ sides. Tonight I am doing beans and corn.
