Sweet and Savory Pork Tenderloin Melts

Time for a new sandwich and what better to do than use up some of that leftover pork tenderloin from my Pork Tenderloin and Spice Peach Sauce! It will be sweet and savory, yummy good!
**2 tbsp olive oil
**1 sweet onion sliced
**2 tsp Kosher salt
**½ cup peach preserves
**1 tsp cinnamon
**1 tsp nutmeg
**1 tsp allspice
1 tbsp olive oil
4 sour dough or ciabatta rolls, split
1 tbsp honey mustard
8 slices extra sharp cheddar cheese
½ a cooked pork tenderloin, thinly sliced
1 cups shredded cabbage mix for coleslaw
Pre heat oven to 450*
**In a skillet heat olive oil over medium heat add onion, cook slowly until soft and light brown (caramelized) add salt, peach preserves, cinnamon, nutmeg and allspice. Heat through, stirring occasionally until melted and incorporated. Remove from heat and set aside.
Brush insides of rolls with olive oil, place open side up on cookie sheet and place in oven for 3-5 minutes or until it starts to brown.
Remove from oven and spread one half with a light coat of honey mustard. Place a slice of cheese both halves of roll, next place pork, drizzle each pork covered slice with some of the sauce.
Put back into oven for 5 – 10 minutes or until hot and bubbly.
Remove from oven and place some of the cabbage mix on each top of pork. Cut in half and serve warm with chips or fries.
** Note, if you use the left over pork from my Pork Tenderloin and Spice Peach Sauce, you don’t need to make the peach sauce.
