Sour Cream and Green Onion Potato Bake

6 Medium sized red potatoes

8 green onions

1 Tbls Olive oil

1 Tbls Butter

1 Clove Garlic minced

1 Cup cream divided

Salt and pepper to taste

1 Tbls Flour

¼ cup shredded Romano cheese

¼ cup shredded parmesan cheese

½ cup sour cream


Preheat oven to 375 F.

Peel and dice potatoes into ½ inch cubes place in casserole dish, chop green onions whites and part of the greens, put in dish with potatoes.

Chop the onion  Potato and Onion

In a small saucepan heat olive oil and butter over medium heat, when butter is melted add garlic and sauté for about one minute, stir in ¾ cup cream and salt and pepper, cook until hot.

Cream Sauce

Meanwhile in small measuring cup whisk together remaining cream and flour until smooth, slowly whisk this into the hot cream mixture to thicken, add slowly whisking the cheese until smooth and creamy. Pour this mixture over the potatoes and stir in. Fold in sour cream and sprinkle a little more cheese, if desired over top.

Ready For Oven

Cover and bake for 35 minutes. Remove cover and continue to bake an additional 15 minutes or until potatoes are fork tender.
