Oh… I am craving Mexican food. I just love it! Problem is I don’t make it so much because my Honey prefers other foods. So the challenge is to make something so good that he likes it as much as I do! Today I am going to feature a few older recipes in the ingredients as well as a recipe from another blogger! I hope you enjoy it!
Serves 4 – 6
- 8 medium flour tortillas
- 1 pound ground beef, browned and drained
- 1 onion diced
- 2 cups Refried Beans
- 2 cups Mexican Blend shredded cheese
- 2 cups Homemade Red Enchilada Sauce, from Michaela at An Affair From The Heart
- Shredded lettuce
- Homemade Salsa
- Diced tomatoes
- Sour Cream
Preheat oven to 350° F
One each tortilla, spread a scoop of beans,
add some ground beef, sprinkle a few onions
and some cheese. (Make sure to reserve enough cheese to sprinkle over the top!)
Roll them up and lay them next to each other in a casserole dish.
Bake uncovered for 30 minutes, until hot inside and tortillas are slightly browned.
Now pour the sauce over the top of the burritos and
sprinkle with the remainder of the cheese and a few onions.
Place back in oven and bake an additional 10 minutes or until cheese melts and gets bubbly.
Place a burrito on the plate and garnish with some of the “toppers” if desired. Served with Jalapeno Rice!
I LOVED Michaela’s sauce it was wonderful, my family found it a bit spicy, so I used 1 cup Michaela’s sauce and one cup mild enchilada sauce.
