Smoked Sausage with Rice!

I have eaten so much pasta this week I need some rice!! I had a bunch of smoked sausage left in the freezer so… what a great combo! And nothing better than a one pot meal, right? On a crazy, run around weeknight, simple easy, little cleanup and FAST! It should taste really great, too!!!
Serves 4 – 6
Ingredients:
- 1 smoked sausage link (I am using Hillshire Farms, Chicken Smoked Sausage tonight)
- 1 cup basmati rice (my favorite)
- 1 onion, chopped
- 1 jalapeno pepper, seeded and chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tsp. oregano
- Kosher salt and cracked pepper to taste
Cut sausage into slices. In large skillet over medium heat, cook sausage until lightly browned. I am using chicken sausage, so there isn’t much grease. If it is really greasy, drain the sausage and return to the pan.
Add in onion and jalapeno pepper. Cook until onion is slightly translucent.
Now the garlic, cook for an additional minute.
Add rice and stir to coat with the seasoning and oil.
Stir in broth, oregano and salt and pepper. Bring to a boil, reduce heat, cover and simmer for 15 minutes. Or until liquid is absorbed and rice is tender.
Remove from heat and let stand for 5 minutes before serving.
