Smoked Sausage and Pasta Bake!

This is for my hubby, since I am making a vegetarian pasta bake for myself tonight. He would probably like the one I making for me, but I know he really will love this with the smoked sausage in it! It will be hearty, meaty, flavorful and filling! Plus I will have leftovers for a couple days which helps when we are so busy!
- 1 cup elbow macaroni or any other bite sized pasta
- 1 tbsp. olive oil
- ½ cup onion, diced
- ½ cup bell pepper, diced
- 1 clove garlic, minced
- 1 cup zucchini, diced
- 2 cups smoked sausage slices
- 1 cup diced tomato
- 1 tsp. ground mustard
- 2 tsps. onion powder
- Salt and pepper to taste
- 1 cup sharp cheddar cheese, shredded
Preheat oven to 350°F
Coat an 11×13 baking dish with nonstick spray.
Cook the pasta according to package instructions, undercooking by 2 minutes. Drain and set aside. In the same pot heat the olive oil over medium heat. Add the onion and bell pepper and cook until onion becomes slightly translucent. Add the garlic and cook an additional minute. Stir the pasta back in and add the zucchini, sausage, tomato, ground mustard, onion powder, salt and pepper. Taste and adjust seasoning if necessary. Stir in ¾ cup of the cheese, pour into baking dish. Top with the remaining cheese. Cover with foil and bake for 30 minutes. Remove foil and place back into oven and bake an additional 5 – 10 minutes until cheese is bubbly.
