Smoked Potato Casserole!

I am smoking a chicken today! I love this smoked chicken recipe I found online, Apple Smoked Chicken in a Pie Pan! So, to go with it I thought, hmmmm… smoked instead of baked potatoes? That should work and be really good! You know what? They are really good! Even my son who isn’t a huge potato or casserole fan loved them and had seconds. They turned out a little smoky and tender. Really good!
- 5 medium red potatoes peeled and cut into large chucks
- ¼ cup vegetable oil
- Salt and pepper to taste
- ½ cup fresh chives, chopped
- 4 strips crispy center cut bacon, chopped
- ½ cup sharp cheddar cheese, shredded
My smoker was already set at 275°F for my chicken. I am using apple wood chips and have a water tray in my smoker.
Mix together the potatoes, oil, salt and pepper. Put into a small baking dish, I used an old glass baking dish. Place in smoker for 2 to 2 ½ hours or until potatoes are tender. Remove from smoker and top with the remaining ingredients. Place back into smoker an additional 10 minutes for everything to get hot and the cheese to be melted. Yummy!!
