Smashed Potato Patties!

I made my Roasted Garlic Smashed Potatoes for dinner last night and guess what? I made WAY too many! I guess I thought I was feeding an army instead of just four of us! But… the good news is, now I can use them for dinner tonight, too! I am kind of leaning toward just grilling some kielbasa on the grill and having the potatoes as a side or maybe doing some eggs and sausage with my little delicious patties! I haven’t quite decided!

Serves 4



  • 2 cups left over Roasted Garlic Smashed Potatoes
  • ½ cup sharp cheddar cheese (Or parmesan works well, too) shredded
  • 1 tbsp. olive oil or olive oil spray
  • Salt and pepper to taste


Mix together potatoes and cheese.

In skillet

In a large skillet heat olive oil over medium high heat. Using a ¼ cup measuring cup or an ice cream scoop, scoop out eight equal portions of the potato mixture and place in skillet. Flatten down slightly.


Cook 5 minutes on each side or until they become browned and crisped on the outside and hot inside.

Serve hot.

Other wonderful add in ideas, bacon bits, chives, chopped jalapeno, or anything else that goes great with potatoes!
