This is so easy to throw together, cook on the grill in foil or in the oven as well! Great for a summer barbeque or with a crock pot chicken. Pretty much anytime. It works wonderfully with fresh chives in the summer or dry chives in the winter.
1 package frozen corn (I like the white corn feel free to use fresh of course)
1 tbls olive oil
1 tbls butter
¼ cup fresh chopped chives
Salt and pepper to taste
You can do this in the oven, but I like the flavor I get when I do it on the grill. In heavy duty aluminum foil place corn, olive oil, butter, chives, salt and pepper, seal tightly.
Place foil packet on top rack of gas grill if you have one, start grill to warm for meat. After five minutes flip corn, continue to flip every five minute or so… usually corn will be on grill 15 minutes or so. Pour into serving bowl and stir, be careful! It is really hot.
Preheat Oven to 350*F
Place all ingredients in a casserole dish. Cover with foil and bake for 30 minutes or until hot. Remove foil, stir and serve.
