Nothing says Sunday night dinner to me more that a comforting and flavorful potato dish. My husband, as I have said before loves potatoes. One of his favorite dishes is Scalloped Potatoes. He really likes them with ham or bacon. This dish can be made with added ham, bacon or by itself.

Scalloped Potatoes


6 – 8 Medium red potatoes, peeled

2 tbls butter

1 Sweet Onion, diced

½ cup chicken broth

¾ cup cream, divided

1 tbls flour

1 tsp garlic powder

1 tsp celery salt

Cracked black pepper

½ cup shredded Swiss cheese for top.

2 tbsp bacon (real) bits


Preheat oven to 350F

Thinly slice potatoes 1/8 inch thick; I like to run them through the food processor so they are all the same thickness. Spray casserole dish with non stick spray and layer potatoes in dish.

In saucepan melt butter; add onion and sauté until tender.

Add chicken broth and ½ cup of cream. In separate dish whisk together balance of cream and flour, whisk this into cream mixture. Add garlic powder, celery salt and pepper. Heat and stir until slightly thickened.

Pour mixture over potatoes. Cover with foil and bake for 45 minutes to an hour... until potatoes are tender.

Remove from foil, sprinkle with cheese and put back into oven for 15 minutes.

Until cheese is melted an slightly browned. Top with bacon bits and serve.
