Salmon with Pistachios and Pine Nuts

Only my husband and I will eat salmon. I have to make chicken or serve left overs to everyone else! Oh well, their loss! I love the combination of the nuts with the fish,  a little fresh lemon and dill, delicious! It is so flavorful and healthy too!

Serves 2

Salmon with Pistachios and Pine Nuts


2 salmon fillets, similar in size

1 tbsp mayonnaise

2 tsps dill paste

1 tbsp olive oil

½ cup pistachios

½ cup pine nuts

½ cup panko bread crumbs

Zest from one lemon

Lemon juice from half the lemon

4 lemon slices

2 sprigs of parsley


Preheat oven to 350*F

On parchment paper lined cookie sheet place the 2 salmon fillets, scale side down. I have the scales removed at the store.

In a bowl, combine the dill paste and mayonnaise.

Spread over the two fillets.

Next in a food processor or chopper, place the pistachios, pine nuts, bread crumbs, olive oil and lemon zest.

Pulse until combined and nuts are coarsely chopped.

Place half the mixture on each fillet and pat down to cover top. Next, lightly squeeze the lemon over the top.

Put in oven and bake for 15 to 20 minutes or until fish flakes easily with fork.

Garnish with lemon slice and parsley sprig, serve with a nice pilaf and salad.
