Rustic Turkey and Bacon Sandwiches

I came up with this recipe at work. I was planning on serving this tomato soup I made over the summer and froze and thinking I would make just grilled cheese to go with it, but I thought I wanted something different for the night. I tell you, this ended up being the best sandwich I think I have ever had. It went well with soup and the rosemary olive oil roll it was on was absolutely delicious! I will make this again, soon!
4 Olive Oil Rosemary Rolls sliced in half
8 thick slices of smoked deli turkey
8 slices of thick center cut bacon cooked crisp
4 tbls of creamy herb cheese
1 cup of spring mix salad
1 slicing tomato, sliced
2 slices of red onion
4 slices of havarti cheese
2 tbls mayonnaise
Spread mayonnaise on bottom piece of roll, put two slices of turkey, two slices of bacon, slice of havarti, ¼ cup of lettuce, slice of tomato, a couple of rings of the onion on top. Then smooth one tablespoon of the herb cheese on the inside of the top half of the roll. Put together, cut in half. Serve with soup or salad for a delicious dinner!
I served with a home made tomato soup… not my recipe to share though!
