Potato Wedges!

I am making a Kecia’s Flavor Breakthrough version of Fish and Chips this evening featuring my Cast Iron Fried Fish and these potato wedges! Tonight I am going to season with some dill to enhance the fish I am serving, plus I like dill!

Serves 2 (add more potatoes for more servings)



  • 2 red potatoes, peeled and cut into wedges
  • 3 tbsp. olive oil
  • 2 tsps. Kosher salt

Additional ideas for flavor, add one or more of these.

  • Herbs d’ Provence
  • Rosemary
  • Dill Weed
  • Onion powder
  • Chili powder
  • Mrs. Dash Table Blend
  • Lawrey’s Season Salt
  • Change the kosher salt to season salt of your choice

Preheat oven to 400°F


Place ingredients into a zipper bag and shake to completely coat the potatoes.

Ready to Bake

Spray a cookie sheet with olive oil spray or use a silicone matt on the sheet. Place wedges on sheet. Bake for 20 minutes, don’t open the oven in this time. Remove from oven and flip.

Bake an additional 15 to 20 minutes until browned on the outside.
