Pizza Soup! Yes!! We love pizza in my house. I love to make soup, so Pizza Soup!
1 pound ground Italian sausage
1 pepper diced
1 Sweet onion julienned
2 cloves garlic
1 tbsp Italian seasoning
4 cups tomato sauce
1 cup beef stock
Salt and pepper to taste
6 1 ½” thick slices baguette bread
Olive oil spray
6 slices of provolone cheese
1 cup mozzarella cheese shredded
More Italian seasoning to taste
½ cup mini pepperoni
Preheat oven to 400*
In large stock pot or Dutch oven, brown Italian sausage, breaking into small crumbles, drain and return to pot.
Add green pepper and onion.
Continue to cook until onion becomes slightly translucent.
Add garlic, Italian seasoning tomato sauce, beef stock, salt and pepper. Bring soup to a boil, reduce heat, cover and simmer for about 30 minutes to cook veggies and combine flavors. Test seasoning…
In the meanwhile spray both sides of the baguette slices with olive oil spray and place on cookie sheet.
Pop into oven and toast approx 5 minutes each side.
Remove and place into individual oven proof soup bowls or mugs.
When soup is cooked through ladle into mugs over the bread, fill to ½ inch from top.
Sprinkle with mozzarella shreds
Top each with a slice of provolone.
Sprinkle a little Italian seasoning over each, now place a few pieces of pepperoni on top.
Place on cookie sheet in case of drips and place back into over or under broiler until cheese starts to brown and is bubbly hot! Make sure to put mugs on plates to serve, it is VERY hot. It will look similar to French Onion Soup. Yummy! Serve with extra bread slices if desired.
