Parmesan Chive Scramble!

I think this has become our favorite go to for eggs. It sounded so good to me one day so I made it and my Honey loved it! We have it almost every weekend when we are needing a quick but hearty breakfast! I also have been know to make this for dinner on a over booked day. The Parmesan is so nice and adds just a touch of salty richness to the eggs. The chives give the a burst of freshness. In the summer I like to pick the chives fresh from the garden, but dried chives work just as well.
Serves 2
Prep: 10 Cook: 10
Ingredients:
- 4 eggs
- 1 tbsp. Light cream
- 1 tbsp. Chives
- 2 tbsp. Shredded Parmesan
- 1 tsp. Kosher Salt
- 1 tsp. Garlic and Herb Salt Free Blend
- Pepper to taste
- 1 tbsp. Butter
Scramble the eggs with the cream.
Add the chives, salt, garlic herb blend and pepper.
Scramble again…
Stir in the Parmesan into the eggs.
In a skillet over medium low heat melt the butter.
Pour the egg mixture into the skillet.
Let set for about 30 seconds, stir…
Continue to cook and stir until the eggs are all set.
Serve with your favorite toast.
So simple, yet so packed with great flavor! And what a great idea for time-crunched nights when you need a quick ‘n healthy meal!
