I am making South Western Mac and Cheese tonight! Delicious… but not so light on the calories! So, I wanted something fresh and healthy to go with it! My Honey said this was the best fish I have ever made him!
Two tilapia filets, approximately the same size.
¼ pan searing flour
¼ cup olive oil
2 tbsp coconut oil
¼ cup dry white wine
Juice of 1 lemon
Juice of 1 lime
1 tsp chili powder
1 tsp cumin
1 tsp cilantro
1 tsp garlic powder
Black pepper to taste
Additional slices of lime and lemon for garnish
Fresh sprigs of parsley or cilantro for garnish
Rinse and pat dry tilapia fillets. Place in shallow dish. Mix together Olive oil, wine, lemon and lime juice, chili powder, cumin, cilantro, garlic powder and black pepper.
Pour over fish and let stand in refrigerator for an hour.
Place pan searing flour on a plate
In a skillet heat the coconut oil over medium high heat.
Coat both sides of the fish fillets with the pan searing flour.
Place fish in pan, cook 2 – 3 minutes each side, depending on thickness. Fish will easily flake apart when done and will be nice golden color on the outside.
Drain on a paper towel.
Plate and garnish with citrus slices and greens.
Beautiful, flavorful and healthy, too!
