Oven Roasted Lemon Herb Chicken!

I love roast chicken… in the oven.  My Honey he has decided that he likes it in the smoker better these days. I like it that way too, but I love the ease of just sticking it in the oven and forgetting about it for a few hours. Normally I save this recipe for fall or winter, and  today is cool and rainy and it just sounded good! PERFECT! I am going to serve it with a cheesy Hash Brown Casserole, too!

Serves 6 (or four with left overs!)



  • One roasting chicken
  • 1 bunch fresh oregano
  • 1 bunch fresh rosemary
  • 1 bunch fresh thyme
  • 1 bunch fresh rosemary
  • 1 lemon
  • 1 onion
  • 2 cloves garlic minced
  • ½ cup olive oil
  • ½ cup white wine
  • Salt and pepper to taste

Preheat oven to 275* F.


Rinse chicken in cool water, remove giblets if it has them. Place in roasting pan.


Cut lemon and onion in half, place half a lemon, half the onion, half the herbs in cavity of chicken. In a bowl or measuring cup, squeeze the other half a lemon, add oil and wine and garlic. Whisk together. Pour over chicken.  Cut the rest of the onion into chunks and place around the chicken. Place the balance of herbs around the chicken. Doesn’t it look all happy resting in herbs? Sprinkle with salt and pepper.  Put in oven for 3 to 4 hours. Make sure chicken reaches an internal temperature of 165* F. Take foil off and turn temp up to 350* to brown for 10 minutes.

Oven Roasted Lemon and Herb Chicken!

Remove from oven, cover with foil again and let rest for 10 minutes. Carve and serve.
