Mint Chocolate Christmas Cookies!

I am adapting a recipe out of my Betty Crocker cookbook for this. It is the one for Candy Cookies, ya know… the one with the candy coated chocolate pieces! I wanted to do something fun with the Andie’s mint chips I found. I think this will be fun.
Makes around 3 dozen cookies
- ½ cup granulated sugar
- ½ cup packed brown sugar
- 2/3 cup butter flavor shortening
- 1 tsp. vanilla
- 1 egg
- 1 ½ cups all purpose flour (not self-rising)
- ½ tsp. baking soda
- ½ tsp. salt
- ½ cup Andie’s Mint Chips
- ½ cup holiday M&M’s
Preheat oven to 375*F
Mix the two sugars, shortening, vanilla and egg together.
Now add the balance of the ingredients and
stir to combine completely.
Drop onto ungreased cookie sheet with a teaspoon approx. 2” apart.
Bake 8 – 10 minute or until edges are lightly browned.
When I made this I used too many of the candies. They were still good, just a bit too chunky, so I cut the recipe back to a ½ cup of each. You can adjust to your tastes.
