Mexican Potato Dinner Bake!

Ground beef in the fridge, what should I make? I haven’t made potatoes in a LONG time for my Honey either. What can I do tonight for dinner? It is cool so I am not worried about heating up the kitchen. MMM, Mexican sounds good! I think the boys will like this!
- 1 pound lean ground beef or ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jalapeno pepper, seeds and veins removed, minced
- 1 can, petite diced tomatoes
- 3 tsp. ground cumin, divided
- 2 tsp. chili powder
- 2 tsp. cilantro
- 2 tsp. salt
- 1 can Mexican corn, drained
- 2 tbsp. olive oil
- 4 red potatoes, peeled and diced
- 1 cup sharp cheddar cheese, minced
Sour cream, salsa, guacamole
In a large skillet, brown ground beef breaking up while cooking, medium heat. Drain off grease.
Add the onion, garlic, and jalapeno, continue to cook until onion becomes slightly translucent. Add 2 tsp. cumin, 1 tsp. of chili powder, 1 tsp. cilantro, 1 tsp. of salt. Mix in the corn and tomatoes. Continue to cook stirring often until juices from tomatoes are absorbed.
Meanwhile, Heat the olive oil in another large oven proof skillet over medium high heat. Add the potatoes and brown stirring often.
When browned stir in the rest of the cumin, chili powder, cilantro and salt. Reduce heat to low.
Top with the ground beef mixture. (So my skillet ended up being too small! I know! Just move it to a large casserole dish!) Sprinkle with the cheese.
Place in oven and let cheese melt.
Serve hot with your favorite toppings!
