Mexican Calzone!

So in the Mexican mood tonight! I have been for a couple of days! I kind of always am! Of course I had to be different and create something unique for us! It was like a giant taco!! I can’t wait for you all to enjoy it! Hope everyone loves it! I know we did! It was filling and delicious with the fresh made crust and the wonderful filling, cheesy and spicy!

Serves 4 – 6



  • 1 pizza crust (here is my favorite: )
  • 1 pound ground beef
  • 1 onion julienned
  • 1 tbsp. chili powder
  • 2 tsps. Cumin
  • 1 clove garlic, minced
  • 1 tsp. kosher salt
  • 1 cup diced tomato
  • 1 jalapeno, seeded and minced
  • 1 cup pinto beans
  • 1 1/4 cup shredded cheddar cheese, divided

Prepare dough as directed. Set aside to rise, about 40 minutes.

Preheat oven to 375° F


In large skillet brown ground beef, drain and return to skillet. Add onion, chili powder, cumin, garlic, salt and jalapeno. Cook until vegetables are softened.

Beans and Maters

Add beans and tomato and heat through. Remove from heat and allow to cool before loading into calzone, this is very important.


When dough is ready, punch down, place on floured cookie sheet or pizza pan. (I like to use my pizza pan as a guide for shape and size) press dough out to form a large circle.


On one half, place the meat mixture leaving enough room on the edge to roll over, sprinkle with 1 cup of the cheese. Fold dough in half over meat mixture.

Fold and Seal

Roll edges over and pinch to seal.

Vent and Sprinkle

Place a couple slits in the top to vent and sprinkle a small amount of cheese on top. Place in oven and bake for 20-30 minutes or until golden brown.

Mexican Calzone Baked

Remove from oven and let cool for 5 minutes before cutting.

Cut into 4 – 6 pieces, serve hot.

Suggested additions:

Sour cream

More cheese





Black olives
