Meatloaf Patty Melt!

Meatloaf is a hit in my house. I made an extra large Crock Pot Meatloaf this weekend so that I could send a bunch back to school with my son and take some to my Mom. I still had left overs and I know that my husband loves a good sandwich. He likes Patty Melts so this seemed like a great idea to make for him. Patty Melts are a wonderful comfort food, too. This recipe is similar to my Meatloaf Melt but more like a traditional patty melt.
Serves: 2
Ingredients:
- 1 tbsp. butter
- 1 tbsp. olive oil
- 1 onion, sliced
- 2 1” thick slices of left over meatloaf (Crock Pot Meatloaf)
- 4 slices Swiss cheese
- 4 slices rye bread
- 2 tbsp. mayonnaise
Heat the butter and olive oil over medium heat. Add the onions and cook, stirring occasionally until they start to brown. Add the meatloaf to the skillet and heat for 2 minutes each side. Remove the meatloaf and onions from the pan. Reduce heat to low Spread mayo on all 4 slices of bread. Place two of the slices of bread, mayo side down in the skillet, top each with a slice of cheese, then meatloaf and onion, then the other slice of cheese. Top with the other slices of bread mayo side up. Cover and grill for about 5 minutes, check occasionally to make sure you don’t burn the bread. Flip and repeat on other side until cheese is melted and bread is toasted.
Remove from skillet, cut in half, serve hot with chips and a pickle or some fries.
