Leftover Meatloaf Parm Casserole!

So I made my Crock Pot Meatloaf last night for dinner! I just love it! I have a lot left over but none of the sides… I thought what can I do with the left overs? I also had a batch of sauce in the freezer. Hmmm… I think this will be really special. I will make it into a casserole and I think it will stretch both leftovers nicely. Delish and budget friendly, too. I think even family friendly! Who doesn’t like a nicely seasoned piece of meat covered with sauce and cheese on a bed of pasta? Well I know in my house that makes everyone happy!
Serves 8
Ingredients:
- 2 cups bite sized pasta (macaroni, penne, etc.)
- 4 large slices leftover meatloaf (Crock Pot Meatloaf)
- 3cups of your favorite spaghetti sauce or meat sauce, divided.
- 1 cup shredded mozzarella (more if you like it)
- ½ cup shredded Parmesan
- ½ cup Panko bread crumbs
Preheat oven to 350°F
Prepare pasta slightly undercooking by 2 minutes drain and return to pan.
Stir in 2 cups of the sauce.
Pour macaroni into a 9×13 casserole dish.
Cut the meatloaf slices in half to make 8 portions. I had one little lonely end piece, so I put it in with the gang! Lay on top of the pasta and sauce.
Pour the rest of the sauce over the meatloaf slices.
Cover with foil and bake for 20 minutes. Remove foil and top with the mozzarella cheese and parmesan cheese. Sprinkle the bread crumbs over where the meatloaf slices are.
Pop back into the oven for an additional 10 minutes or until cheese is melted and bubbly.
Let stand for 5 minutes before serving.
