Jalapeno Sausage and Potato Grill Packet!

This is inspired by my son. He learned how to make an entire meal over a campfire in foil packets. I found these cheddar jalapeno smoked sausages the other day at Aldi, however you could use any smoked sausage and just add some jalapenos to your packet. I also am using a tri colored fingerling potato, but a few cubed red potatoes would be great, too!
- 1 package smoked sausage of your choice, cut into pieces (I used jalapeno cheddar sausage)
- 1 package of fingerling potatoes or use 4 red potatoes, cut in cubes
- 1 onion, diced
- 1 bell pepper, diced
- 1 jalapeno pepper, finely diced
- ½ cup corn kernels
- Salt and pepper to taste
- 2 Tbsp. Olive oil
- ½ cup shredded cheddar cheese
Preheat grill to medium high heat
Place all ingredients except the oil and cheese on a double layered, large sheet of heavy duty aluminum foil. Drizzle with oil and toss together to coat. Seal the foil tightly. Turn off on burner on grill and place on the foil packet on that side. Cook for 10 minutes the turn packet over, go an addition 10 flip over and repeat for 2 more minutes on each side. Remove from grill. Carefully unwrap packet and poke a toothpick into a potato to make sure they are done.
Pour contents into a large bowl.
Sprinkle with the cheese, let melt and serve hot.
