Italian Veggie Panini!

I made this for myself while making the Italian Sausage Panini’s for my guys. This was so delicious and satisfying, yet vegetarian.
- 1 zucchini, sliced on the bias
- ½ cup baby spinach leaves
- 1 bell pepper, thinly sliced
- 1 onion thinly sliced
- 1 tbsp. olive oil
- 4 thick slices Italian bread
- ½ cup shredded mozzarella
- Generous shake of Italian seasoning
- 2 tbsp. shredded Parmesan
In a skillet heat olive oil over medium high heat and add pepper and onions, cook until onion is slightly translucent. Remove from heat. Preheat Panini press to medium high. Place half of the cheese two of the slices of bread. Top with zucchini, spinach, pepper and onion. Sprinkle the Italian seasoning over the filling and top with the remaining mozzarella and bread. Sprinkle ½ of the Parmesan cheese onto the press in two places. Lay sandwiches over the Parmesan and top them with the rest of the Parmesan. Close press tightly and cook until browned and cheese inside is melted. About 4 minutes.
Cut in half and serve with a side of warm marinara.
