Sandwiches! Hearty, balance meals… filling and tasty! What a great opportunity to totally express yourself! I think there are just so many possibilities when it comes to making them! This was such a fun one to create and oh so tasty, too!
2 Ttbls mayonnaise
1 Tbls shredded parmesan
1 tsp garlic powder
1 tsp Italian seasoning
4 Ciabatta Rolls (I used a loaf and cut it this time)
3 Tbsp Olive Oil divided
2 Boneless Skinless Chicken Breasts
2 Tbsp Italian Herb Blend
1 Clove Garlic
Salt and Pepper
4 slices fresh mozzarella
1 cup spring mix chopped
1 slicing tomato, sliced
1 slice red onion
In small bowl mix together mayonnaise, parmesan, garlic powder and Italian seasoning, set aside. This is your spread.
Slice the rolls in half, brush with 1 tbls olive oil, place face down in large skillet and grill to a light brown. Set aside.
Slice chicken breasts into several thin strips. Heat rest of oil over medium heat in a large skillet, add chicken strips and sauté until browned and cooked through.
Add the herb blend and garlic, salt and pepper, stir to coat and continue to stir and cook an additional minute, divide into four separate sections in the pan.
Place one slice of cheese on each mound of chicken, cover and let melt. Remove from heat and prepare the rolls.
Spread ¼ of the mayonnaise spread onto each roll, top and bottom.
Place chicken and melted cheese on bottom of roll, top with lettuce, onion and tomato slice, put top on and serve.
Delicious, warm and gooey, full of FLAVOR!
