Italian Sausage and Kale One Pot Pasta Toss!

I seem to have jumped on the kale bandwagon! Wow! I never knew when I bought this I would love it so much. So far I have made two soups with and now I want to expand my kale horizons and get it into some pasta! To make it even better I am throwing it into a one pot pasta toss! I can’t wait to eat this! I hope my Honey and my son love it as much as I do. I think it will be a true go to meal when I am in a hurry!
- 1 pound Italian sausage links, browned and cut into slices
- 1 tbsp. olive oil
- 1 onion julienned
- 2 cloves garlic, minced
- 3 cups kale julienned
- 4 cups Chicken broth
- 1 tbsp. red pepper paste (or 1 tsp. red pepper flakes)
- 1 package Rigatoni
- Salt and pepper to taste
- ½ cup shredded Parmesan cheese
Over medium heat cook Italian sausage until brown, add olive oil and onion. Cook until slightly translucent.
Add kale and cook until it becomes softened.
Stir in broth. Cook for 10 minutes.
Now the red pepper paste and the rigatoni. Bring to a boil, reduce heat and simmer for 20 minutes or until most of the liquid is absorbed and pasta is tender.Add salt and pepper to taste, toss with shredded parmesan cheese. (to be honest, I added more than a ½ cup of cheese, yes please!)
Place in a nice big bowl, serve hot with a crusty bread or salad… or both! This meal was so flavorful and easy to prepare! I will be making it again!
