Italian Sausage Panini and Etsy Shop Update!

It has been a long time since I’ve posted anything. I have been so busy!
As you all know, a while ago I opened an Etsy store to sell my PDF Cookbook! Well I have started making a lot of different craft items, beaded jewelry, decoupage jars and boxes. It is a lot of fun and I am changing the name of my little store to KeciasKreations. You can still get a copy of my cookbook there as well. I will be changing a couple of my social media pages, Instagram , Twitter also possibly adding a new FB page.

Now for a great recipe!
I got my Griddler out yesterday to make pancakes and decided it had been a really long time since I had made a Panini. My guys really like it when I make any kind of sandwich for dinner so I know already this will be a hit! I am also making a veggie version for myself, recipe will be coming for that, too!
- 2 Italian sausages, sliced on the bias
- 1 bell pepper, thinly sliced
- 1 onion thinly sliced
- 1 tbsp. olive oil
- 4 thick slices Italian bread
- ½ cup shredded mozzarella (subject to preference)
- Generous shake of Italian seasoning
- 2 tbsp. shredded Parmesan
Lightly brown the sausage slices in a skillet over medium high heat. Remove from skillet and set aside. In the same skillet heat olive oil and add pepper and onions, cook until onion is slightly translucent. Remove from heat. Preheat Panini press to medium high. Place half of cheese on two of the slices of bread. Top with sausage, pepper and onion. Sprinkle the Italian seasoning over the filling and top with the rest of the cheese and bread. Sprinkle ½ of the Parmesan cheese onto the press in two places. Lay sandwiches over the Parmesan and top them with the rest of the Parmesan. Close press tightly and cook until browned and cheese inside is melted. About 4 minutes. Cut in half and serve with a side of warm marinara.
