6 Turkey Italian Sausages
1 tbsp olive oil
2 Sweet Onions sliced
1 Green Bell Pepper Sliced
Salt and Pepper to taste
¼ cup of flour for dusting surface of counter
1 cup shredded mozzarella
1 can of refrigerator biscuits (or your favorite recipe for rolled biscuits)
Sauce to dip in:
2 cups tomato sauce
1 tsp oregano
1 tbsp Italian Herb blend paste or you can use Italian Seasoning
1 clove garlic minced
1 tsp granulated sugar
1 tbsp pepper paste (optional)
Salt and pepper to taste
Preheat oven to 350 F
In skillet brown Italian Sausages, add olive oil, onion and green pepper. Continue to cook and stir until onion and pepper are softened and sausage is completely cooked through, salt and pepper to taste. Set aside and let cool a bit.
Dust counter, remove biscuits from container and roll or press out until about a ¼ inch think.
Place a sausage and some pepper and onion in each rolled out biscuit, sprinkle each with a little of the cheese and roll up tight. Set on cookie sheet and bake for 8 to 10 minutes until the biscuit wrap is golden.
While the rollup is baking make or heat your sauce.
Place all ingredients in saucepan and heat over medium low heat until hot.
To lighten up the dish I used turkey Italian sausage, low fat biscuits and low moisture part skim mozzarella. You can use regular Italian sausages, biscuits and whole milk mozzarella. Even add mushrooms if you like them.
