Italian Meatloaf Burgers!

I love meatloaf. I used to really hate it as a kid unless my mom made it with peppers and onions in it, but my dad didn’t like peppers and onions. My whole family loves my meatloaf recipe and the left overs are so fun to do things with. This burger features my Crock Pot Meatloaf. I know it will be a hit!
- 1 tbsp. olive oil
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 2 cloves garlic, minced
- ½ cup, prepared marinara
- 4 slices of left over Crock Pot Meatloaf
- 4 slices provolone
- 4 buns of your choice or 8 slices Italian Bread
- 2 tbsp. shredded parmesan
Heat oil over medium high heat, add the onion and pepper. Cook until onion is slightly translucent. Add garlic and sauté an additional minute. Add the marinara, reduce heat to low to keep warm. Preheat grill to medium (you can also reheat the meatloaf in a skillet). Place the meatloaf slices on the skillet, about 2 minutes on each side or until heated through. Place the cheese slices on top of meatloaf and close grill lid. Heat an additional 2 minutes or until cheese is melted. Place a slice of meatloaf on the bottom of each bun.
Top with the onion and pepper mixture, then sprinkle some of the parmesan over each of them. Cover with the top bun and serve.
