Italian Green Beans!

My son has been working at the public market on Saturday’s and one of the things he gets in return is to bring home some of the produce! Today he brought me fresh green beans, sweet corn and blueberries! Oh boy! I love green beans, but I really wanted to do something different with them tonight that had a lot of flavor. Also wanting to incorporate more summertime flavors!
- 2 cups green beans cut up
- 1 tbsp. olive oil
- 1 sweet onion, julienned
- 1 bell pepper chopped
- 1 clove garlic, minced
- 2 tsps. Italian seasoning
- 2 cups diced tomatoes (fresh is best, but mine weren’t ready)
- Salt and pepper to taste
Place green beans in a pot and cover with water. Bring to a boil and simmer for about 10 minutes, drain and run under cold water to stop cooking.
In same pot, add olive oil and heat over medium heat. Add onion and bell pepper. Cook until onion becomes slightly translucent.
Add garlic and Italian seasoning. Cook until it becomes fragrant, about two more minutes.
Add tomatoes, salt and pepper and heat through. Place beans into the tomato mixture and heat through.
Serve hot, sprinkle with a little shredded parmesan cheese.
