Homemade salsa is one thing I really enjoy! Especially with my fresh tomatoes and jalapenos. I started making my own two summers ago when I started my own garden. For the first time ever having enough space to grow things! However being March I have to settle for store bought, it is still good! It is great to top things with, dip chips in… heck if I could I would eat it with a spoon!!
2 ripe tomatoes, I like heirloom for color
½ red onion, diced
1 jalapeno finely diced or more if you like it hot (remove seeds and veins)
1 tbsp. olive oil
1 tbsp. lime juice
1 tsp cumin
1 tsp chili powder
2 tsps. Garlic powder
1 tsp cilantro (1 tbsp. fresh)
1tsp granulated sugar
Salt and pepper to taste
Dice tomatoes and put in medium bowl.
add balance of ingredients, stir. Taste seasonings and adjust to your taste, taste again… oh not quite sure yet, one more taste. Oh wait! You caught me! It is so good! OK, now place in fridge for a half hour (if you can wait that long) to combine flavors, serve as a topping or with chips or veggies!
