Holiday Pistachio Poke Cake!

Now really you don’t need to limit yourself to just the holidays to do this lovely cake! I am decorating it to be a holiday dessert! You can change up the toppings to be what you would like to make it for any day! Poke cakes are easy, fun and can be festive as you see. They are great to take to get togethers and don’t take a lot of time to make. As you know I am not the most creative baker, so poke cakes are a great option for me.

Serves 16



  • 1 package of white cake mix
  • 3 eggs
  • 1 1/4 cups water
  • 1/3 cup oil
  • 2 small packages of pistachio pudding
  • 4 cups milk
  • 1 container whipped topping
  • ½ cup chopped pistachios
  • ½ cup holiday chips


Prepare cake as directed using a 9 x 13 pan. When done, let cool for a few minutes then poke several holes into the cake, all the way through to the bottom. Use something that will make large holes, I like my wooden spoon handle.


Prepare the pudding according to the directions on the box.  Pour pudding over cake and spread around the top, using a rubber spatula to push it into the holes while spreading it around.  Place in refrigerator and let cool completely.


Spread whipped topping over the top.  Sprinkle the top with the chips and the nuts.  Cut and serve.

  2. I make poke cakes but this one recipe was confusing. It says to make pudding according to the directions but the recipe for the cake calls for only two cups of milk while the pudding mixes call for two cups per mix so that would be 4 cups altogether. I just don’t know what to do.
