Herbed Turkey and Bacon Grilled Cheese!

I made this homemade No Knead Bread this weekend that is just screaming grilled cheese for the left overs! No really it is on my counter screaming… “MAKE ME INTO A GRILLED CHEESE!!!” Who am I to ignore a loaf of bread? Of course it won’t be any normal grilled cheese, I have to do something special with this bread. We love that garlic and herb spreadable cheese so I will be incorporating that into the recipe.
- 8 slices good bread, Italian, French, homemade
- 4 tbsp. garlic and herb cheese
- 4 slices sharp cheddar
- 4 slices Havarti cheese
- 8 slices smoked deli turkey breast
- 8 slices bacon cooked crisp
- Optional, tomato slices
- Optional, red onion slices
Spread one side of each of the slices of bread with the herb cheese and place 4 slices,
cheese side down in a large skillet.
Place a slice of cheddar on each of the four slices in the pan, next place the turkey and bacon on the cheddar. If adding any veggies, do it here.Next top with the Havarti cheese and the last slice of bread, cheese side up.
Cover with a lid (I had to be inventive with this extra large skillet and use a pizza pan!) and cook over medium low heat, checking often for desired browning on the bread.
Flip and repeat until cheese is melted and bread is browned to your liking.
Cut in half and serve with a nice salad.
