Herbed Rice with Peas!

Craving rice AGAIN! I love rice… love it! But you all knew that! Do you have a favorite rice? My latest favorite to use is basmati. I just love how fragrant it is. I finally learned how to cook it so it isn’t’ sticky. The key is to not overcook it! I also let it sit for a good ten minutes covered. The other think I like to do is to use stock or broth instead of water to get more flavor! I also am trying to incorporate a few more veggies into the mix. A little tired of just a tossed salad every night. Don’t get me wrong, I love a nice fresh salad, but… time for a little more. I know I have peas in the freezer, but I think I might run by the store and see if there are any in the produce section tonight.
- ½ cup basmati rice
- 1 cup chicken or vegetable broth
- 1 tsp. kosher salt (Optional)
- ¾ cup peas (frozen or fresh)
- 2 tsps. Herbs d’ Provence
- 1 tsp. garlic powder
- 1 tbsp. butter
- Salt and pepper to taste
Place rice, broth and salt in saucepan. Heat to boiling, cover and simmer for 12 minutes, add peas and cook for an additional 2-3 minutes or until liquid is absorbed and rice is tender.
Stir in herbs, garlic powder, butter, salt and pepper. Remove from heat and let sit covered for 5 minutes.
Fluff with for and serve.
Tonight it will be accompanying my Cast Iron Fried Chicken.
A side note: This turned out even better than I expected. My Honey had two servings that night and my 15 year old son did, too. My boy even told me how good it was. Now that is HUGE! Trust me… this one was really good!
