Hamburger Biscuits and Gravy

My family never made biscuits and gravy when I was growing up. The very first time I had them I was with a friend visiting her grandmother. I remember sleeping in her old feather bed. It was so fun and so comfortable that we slept for 12 hours! Kind of like sleeping on a cloud. But that night her grandma made biscuits and gravy. I was a little iffy on how it would be, but that night I absolutely fell in love with them. It was several years after that I had them again, only with sausage. I make them both ways now, usually sausage for breakfast and hamburger for dinner.
I hope you enjoy them as much as I did that first time…
4 biscuits of your choice split in half
1 pound lean ground beef
1 onion diced
1 clove garlic, minced
1 tsp oregano
1 tsp sage
2 tbsp flour
2 cups light cream or milk
Salt and pepper to taste
Sprinkle with a little chive or parsley for color
In a deep skillet, brown ground beef over medium heat.
Drain and add onion. Continue to cook until onion becomes slightly translucent.
Add garlic, oregano and sage; continue to cook for an additional moment or two.
Stir in flour to coat everything.
Now whisk in cream and continue to whisk until flour is all blended into cream. Add salt and pepper to taste. Continue to cook while stirring until gravy begins to thicken.
Place biscuit halves on plate and ladle gravy over them. Serve hot… with a nice veggie or salad.
