Ground Beef and Potato Skillet!

I really was having a tough time tonight trying to figure out something yummy to make. I had stuff out for chili, but I really wasn’t in the mood for it (I know! ME, not in the mood for chili!). So I needed to fry up the ground beef tonight anyway, I will use half for this and half for chili another day. My husband loves potatoes, I have told you this. I think he will be very happy tonight.
- 1 pound lean ground beef
- 1 tbsp. olive oil
- 4 medium sized red potatoes, diced
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 Tbsp. Italian Seasoning
- 2 tsps. Kosher salt
- Black pepper to taste
- 2 dozen grape tomatoes, halved
- 1 cup baby spinach, julienned
- ½ cup shredded mozzarella cheese
- 1 tsp. dried parsley
Preheat oven to 350°F
In an ovenproof skillet over medium heat, brown the ground beef. Drain into a colander and set aside. I also rinse any excess fat off with hot water.
Add olive oil to the skillet and cook potatoes in the oil until they start to brown.
Add back the meat then the onion and bell pepper. Cook until onion becomes slightly translucent.
Now add the garlic and cook an additional minute.
Italian seasoning, kosher salt and pepper, stir to combine.
Remove from heat. Add tomatoes and spinach.
Stir the tomatoes and spinach into the mixture to combine. Taste and adjust your seasonings if needed.
Top with the shredded mozzarella and parsley.
Place in the oven and bake for 10 minutes or until the cheese melts.
