Grilled Sweet Potato Wedges!

I am making a fantastic new sandwich tonight, Autumn Grilled Turkey Sandwiches (look for the recipe soon!) and I want an easy flavorful side to go with it. A recipe that is a little nutritional, but fun , too. One of my favorite autumn flavors is sweet potato. I thought it might be fun to throw them on the grill while I am cooking the turkey for the sandwiches! These are the perfect side dish or even a great appetizer as well!
- 2 large sweet potatoes (I am using white ones, my store didn’t have the orange ones today)
- 2 tbsp. olive oil
- 2 tsps. Kosher salt
- 2 tsps. Sugar
- 1 tsp. cinnamon
Preheat grill to 350° F.
Peel and cut sweet potato into wedges that are approximately ½ to ¾ inches thick. Coat thoroughly with the olive oil. Place wedges on top wrack of grill. Cook for 10 minutes on each side. Be careful not to burn them. Check them often. Turning as needed. You want them to end up firm, but not too crispy.
Remove from grill.
Combine salt, sugar and cinnamon in a zipper bag. Spray sweet potatoes with a little more olive oil and place in bag, shake to coat with the salt mixture. Enjoy!
Since I first made this recipe I have made them again in the oven. To do this I preheated the oven to 400*F baked for 20 minutes, flipped them and baked an additional 15 to 20 minutes. Both ways are equally delicious!
