1 pork tenderloin (love these things!)
2 tbsps. Olive oil
¼ REAL maple syrup (great local ingredient here)
¼ cup balsamic vinegar
1 tbsp. hot pepper paste (here come the spices!)
1 clove garlic minced
1 tbsp. soy sauce
Slice tenderloin in 1 ½” slices and place in shallow dish. Mix balance of ingredients together and pour over tenderloin. Marinate for at least 30 minutes or more if you have time. Maybe whip up a salad, take a walk you know… do something else so you don’t get impatient waiting! They are gonna be good!
Preheat grill to medium temperature. Place tenderloin slices (medallions) on grill cook for 5 minutes, flip and cook an additional 5 minutes, turn again and go 2 more minutes, check temperature. Internal temperature should reach 145° F, if not there yet, flip and cook two more minutes and check again. Repeat until it does.
Serve with a potatoes, rice or pasta and a veggie! Tonight I am serving with a Savory Caramelized Onion Mashed Potato! (My Honey asked for potatoes!)

I asked the question the other day, “I am making pork… I can’t decide, Spicy, Sweet or Savory?” Well I had replies for all and Savory won that day, but the most interesting reply was Sweet and Spicy… so this recipe was inspired. A mixture of maple and spices and everything nices… (I know, not a word but I like it and it rhymes!) Here we go!! Hope you love it!
