Grilled Haddock Foil Pack!

Born out of necessity. My oven is currently out of commission for a couple days… I am really trying to lighten up my personal menu a little so I am trying a lot of new fish ideas… I haven’t made a ton of fish, but I really want to eat more of it.
Serves 1 (add more filets for more people)
- 1 small haddock fillet
- 1 lemon, slice half, juice half
- 1 tsp. dill paste
- 1 clove garlic, crushed
- 1 tbsp. olive oil
- Cracked black pepper
Preheat grill to medium
Place two lemon slices on a pieces of heavy duty aluminum foil.
Lay the fish on top. In a dish mix the lemon juice, dill paste, garlic, olive oil and pepper. Pour the mixture over the fish.
Top with two more lemon slices.
Wrap securely in the foil. Place on grill, medium heat for 15 minutes. I have a top rack in my grill that is where I placed the packet. I didn’t open the grill at any time to check. The more you open, the longer it will take.
My fish is about 1” thick. Fish is done when it flakes easily with fork.
