Grilled Breakfast Sausage Sandwiches!

I pulled some breakfast sausage out of the freezer a couple of days ago and haven’t used it yet. I don’t want to spend a lot of time cooking tonight so I think I will throw it on the grill. Maybe some veggies. Do it like a burger, I might just have something here!
- 1 package breakfast sausage
- 1 tbsp.Olive oil
- 1 onion, sliced
- 1 bell pepper, sliced
- 4 slices American cheese
- 4 English muffins
Preheat grill to medium
Divide sausage into 4 portions and form into 4 patties.
Place Olive oil, onion and peppers on a sheet of heavy duty aluminum foil. Completely seal foil and place on to prack of grill. Cook for 10 minutes, flip packet.
Place sausage patties on grill, cook five minutes on each side. Place English muffins on grill insides down, top rack to grill slightly. Place cheese slices on each patty and let melt.
Remove English Muffins, patties and foil packet from grill. Place a patty on the bottom half of each English muffin. Top each patty with some peppers and onions, be very careful opening the foil packet so you don’t get burned by the steam. Serving tonight with foil packet chive potatoes.
If the mood strikes you, an egg could be added to each sandwich. Also serve with ketchup, mayo… whatever additional condiments you like.
