Greek Inspired Cucumber and Tomato Salad!

I was on my own for dinner tonight and had a beautiful turkey cutlet in the fridge for myself. (Another great recipe) I had to have something light and easy to go with it and this cold, refreshing salad was amazing. Easy since I used a premade dressing and it made enough that I had some left overs for lunch the next day!
- 1 cucumber diced
- 1 large ripe tomato, diced
- ¼ red onion, sliced
- 1 dozen kalamata olives, halved
- 2 tbsp. Greek or Caesar dressing
- ¼ cup feta cheese
- 4 pepperoncini peppers
In a medium bowl mix together the cucumber, tomato, onion, olives and dressing. Cover and place in refrigerator for ½ hour.
Add the feta and toss. Serve with two of the pepperoncini’s on the side.
