Garlic and Lemon Zest Green Beans!

I love salad, but lately I have been in the cooked veggie mood. I adore green beans and would love to serve them more often, but my guys… they don’t jump for joy when they see them. I have been trying to give my beans a little kick here and there to give more variety for the guys. Tonight I am have Lemon Dill Flounder Fillets so I thought I would carry the lemon flavor through them meal with these beans. It should give them a bright and lively flavor! Of course they could be served with any seafood or even poultry dish!
- 2 cups string beans
- 1 tbsp. butter
- 1 lemon
- 2 cloves garlic, crushed
- Salt and pepper to taste
Cover beans with water and bring to a boil, cook for 3 – 5 minutes. Beans should be tender, but still slightly crisp. Drain and rinse with cold water to stop them from cooking, set aside.
In same pot melt the butter and add 1 tsp. lemon zest (keep lemon) and crushed garlic. Cook for just a moment.
Add beans back into the pot, stir to coat and heat through.
Add the juice from half of lemon and some salt and pepper to taste. Stir through and serve hot.
