Crock Pot Meatloaf!

Meatloaf makes me very reminiscent. It makes me think of family dinners when I was young. I truly do consider this a vintage family recipe, though I am the one who put it in the crock pot! I don’t have a lot of time to prepare it. I found this tip for the aluminum foil quite a while ago online and I don’t remember where I found it, but boy does it really work well for lifting that meat loaf out of the pot when it is done! This is so nice to pop in the crock and come home to just have to prepare the sides and serve. Enjoy!
- 3 pounds lean ground beef
- 2 eggs
- ¼ cup bread crumbs
- 1 clove garlic minced
- 2 tsp salt
- 1 tsp black pepper
- ½ small sweet onion finely diced
- ½ sweet bell pepper finely diced
- 1 tbsp. Italian seasoning
Put all ingredients into large bowl and mix thoroughly with hands. Form into a loaf shape.
Line large crockpot with heavy duty aluminum foil with the ends coming over two sides of the pot. Place meatloaf on foil in pot.
Cover and cook for 4 – 6 hours on high or 8 – 10 hours on low. Use foil to remove loaf from pot.
Place loaf on platter, slice and serve.
I like to top it with Caramelized Onion and Beef Gravy often, but tonight I served it plain.
